  • 1 pound boneless skinless chicken breast (cut into cubes (the chicken can be left out for a vegetarian version))
  • 1/2 a yellow onion (chopped)
  • 1 clove garlic (minced or grated)
  • 1/2 tablespoon smoked paprika
  • 1/4 teaspoon crushed red pepper (optional)
  • 4 ears fresh corn (kernels cut off)
  • 1 medium potato (peeled and diced small)
  • 1 cup cream or whole milk
  • 3-4 cups chicken stock (or veggie stock)
