  • 2 tablespoons extra-virgin olive oil
  • 1 onion, diced
  • 1 1/4 cup celery, small diced
  • 1 1/4 cup carrots, peeled, small diced
  • 6 garlic cloves, roughly chopped
  • 1 lb ground beef (15- 20% fat) or use ground elk or lamb, or plant-based ground meat.
  • 2 teaspoons dried oregano or Italian seasoning
  • 2 teaspoons salt, more to taste
  • 1 ½ teaspoons fresh black pepper
  • 1/4 teaspoon nutmeg
  • 1/4- 1/2 teaspoon red pepper flakes
  • 1 cup whole milk
  • 1 cup dry white wine
  • ¼ cup tomato paste
  • 14-ounce can (1 ½ cups) of San Marzano tomatoes, chopped, with all the juices.
  • 1 bay leaf
  • 2 cups chicken stock
  • 1 lb pasta (papparadelle or tagliatelle) cooked to al dente, drained ( save some hot salted pasta water)
  • ½ cup finely grated pecorino or Parmesan, divided (and a Parmesan rind- see notes)
  • Granish: Fresh basil or Italian parsley
