- 2 tsp Kosher salt
- 2 tsp cumin
- 1 tsp chili powder
- 1 tsp oregano (or Mexican oregano)

- ½ tsp onion powder
- ¼ tsp freshly ground black pepper
- 2 Tbsp avocado oil (or other light, neutral oil)
- 1 orange (zested and juiced)
- 2 limes (zested and juiced)
- ½ cup (120ml) chicken broth (or beer)
- 1 large onion (thinly sliced or chopped, plus 1 finely chopped onion for serving)
- 2 bay leaves
- Small tortillas, (corn is traditional, but flour are fine)
