  • 80 ml (1/3 cup) low-sodium light soy sauce ((see notes))
  • 1/2 tbsp gochujang ((Korean red bean paste))
  • 1 tbsp mirin
  • 2 tsp minced ginger
  • 1/2 tsp garlic powder or 1 tsp garlic paste ((I don’t use fresh garlic as it can burn))
  • 1 tbsp sesame oil
  • 1 tbsp neutral oil ((avocado or rapeseed are good))
  • 4 tbsp light brown sugar
