  • 1 strip orange peel (optional)
  • 4 tbsp red wine vinegar
  • 14 oz (400g) can chopped tomatoes
  • 2 tbsp tomato paste
  • 1 cup (250ml) beef stock (or broth)
  • salt and freshly ground pepper (to taste)
  • 2 tbsp fresh parsley (finely chopped, to serve)
