  • 1/2 teaspoon dried oregano
  • 2 carrots, cut into ½-in pieces
  • 2 small russet potatoes, peeled and cut into ½-in pieces (should be 2 cups)
  • 1 large zucchini, cut into ½-in pieces
  • 1/4 cup fresh chopped cilantro, for serving
