  • 1/3-1/2 cup peanut butter (regular or natural, smooth or crunchy *see Note 1 below)
  • 2 teaspoons ground coriander
  • 1 teaspoon cumin
  • 1/8-1/4 teaspoon cayenne (or more, to taste)
  • salt and freshly ground pepper
  • 1/4 cup cilantro (chopped)
  • 2 Tablespoons cornstarch
  • 2 Tablespoons cold water
  • Additional chopped cilantro
